Blog #20 Grilled chicken breast with brown rice and cucumber lettuce salad


 
  • "The shopping"

Here I am in Rego park, shopping for ingredients at Trader Joe's.

4. here are the ingredients
Tj's  chicken breast $5.04
Spring salad $1.99
1 cucumber $0.98
3 lemons $1.00
Brown rice $5.99
Spices I already had at home. My whole meal was under $20 dollars.

 
  • "The Cooking"

Slice chicken breast in half
Cut lemon in half and squeeze onto chicken breast.
Turn chicken breast in lemon juice and rinse with water.
Season chicken breast with:
1/4 of goya adobo
1/4 of black pepper
1/4 spoon of soy sauce
Place grill pan on medium heat
Add olive oil to pan and cook chicken for 5 to 6 minutes each side.



 



















  • Cooking Brown Rice
Rinse brown rice with water
In a quart pan add olive oil then add the rice, 1. 1/2 cups of water and add 1/4 spoon of salt
Cook on low heat for 30 minutes






  • Cucumber lettuce salad
2 cups of lettuce
1/2 medium cucumber, sliced
Salad dressing
1/2 lemon juice
1/2 spoon of Salt
Black pepper
1 spoon olive oil 












I went shopping around 4 in the afternoon, by 7 at night I was eating. The best part was that I saved a lot of "money" cooking at home instead of going out to eat as I usually do on Saturdays.

  2. Your salad looks delicious. I will try to make one myself whenever I can. I like how this meal doesn't cost a lot of money to make. Very nice way of organizing everything on the plate. :)
